Flaming Joe's Jerky Sauce by Jersey Boyz Jerky

Ingredients:Key lime juice,soybean oil,soy sauce,green onion,Worcestershire sauce,(vinegar,water,corn syrup,salt,molasses carmel color,spices,garlic,natural flavor,anchovies,tamarind dextrin&sulfating agent) ginger,cilantro,chili powder,spices,xanthan gum, guar gum.sodium alginate
Appearance: I found the sauce to maintain a good pour-able consistency. Not too thick and not too thin. Visually it reminded me of like a A1 color, that ruddy brown with what looks like black pepper flecks.
Smell: This was tough for me, I couldn't pinpoint that primary smell, you know the smell that makes you go Hmmm thats (so and so) ingredient. Well that didn't happen here. It was like a medley of smells, molasses, anchovies, tamarind. I have to say it made my mouth water a bit.
Taste: This is a really good sauce, the wife made a roast last night so I decided to heat some up for lunch. I poured the sauce right on top of it, no messing around here. I mean, I know jerk sauce is usually associated with chicken, but you gotta go with what you have. You feel a little bite on your tongue at first from the habanero, but the primary flavor is definitely tamarind. Before looking at the ingredients, I tasted it, and could have sworn up and down that there was curry in there. Guess I was wrong. All the other ingredients come into play once you take your second and third bite, even a little tartness from the key lime was detected. The habanero amounts to a nice little burn and the overall flavor of the sauce makes it go down nice and easy.
Heat Level: Going by my taste buds, I would give this sauce a 4. Good for the novice and Pleasing for the ol'time chiliheads.
Overall I like this jerk sauce and will probably continue using it throughout the summer season. If you are a fan of jerk, jerk chicken and all the flavors it employs, definitely give this sauce a try, you wont be disappointed!

I actually made chicken tonight on the grill with this and it was really good Great Job Joe!
